Our Food Grade Nuclease Enzyme is a 5'-phosphodiesterase preparation that is fermented by Penicillium citricaria, through advanced extraction technology, ultrafiltration concentration, and drying. Nucleases hydrolyze nucleic acids into 5'-nucleotides, of which 5'-GMP is a natural flavor enhancer, and 5'-AMP can be converted into 5'-IMP with the same effect under the action of deaminase.The enzyme is widely used in food, condiment, nucleotide, yeast extraction and other industries.

 

Function

Mechanism of Action Nuclease is a type of phosphodiesterase that only cuts single-stranded DNA or RNA without specificity for base pairs. In fact, the enzyme has two enzymatic activities, one is phosphodiesterase activity, which acts on (3', 5')-phosphodiester bonds in single strands of RNA or DNA to generate 5'-nucleotides; The second is 3'-phosphomonoesterase activity, which decomposes 3'-phosphomonoester bonds in mononucleotides or oligonucleotides.
